The sherry influence is clear, but not overwhelming - rather a cosy, warm cloak.
Palate
In terms of flavour, the Nine Springs goes one better. We really are talking about a sherry bomb here! The sweet honey notes envelop the tongue, accompanied by a juicy peach flavour that is infused with fruity sherry and a hint of caramel. What is particularly striking is that there is no leather or tobacco, as is sometimes found in whiskies with a strong sherry flavour - that would not have been appropriate here. Instead, an almost playful wine gum sweetness creeps in, making the whisky round and pleasant. It is rich, sweet and yet complex enough to make you curious about the next sip.
Finish
The finish does not disappoint. Spicy, slightly crisp on the tongue and with a pleasant oak note, the Nine Springs finishes in style. It remains present for a long time without imposing itself too much. A hint of dark chocolate mixes in at the end - enough to round off the flavour perfectly, but never stale. The whisky leaves a warm, satisfying feeling.
